Father/Son Duo Are Behind New Brewery In Ridgefield

The new business, run by the father and son team of Rob and David Kaye, will feature boldly flavored, highly drinkable beers when it opens on Ethan Allen Highway in October. And, they say, it will be served in an elegant and comfortable taproom that combines the building’s industrial feel with a cozy pub atmosphere. (Food won't be served but folks can bring in their own.)

“Like the campfire depicted in our logo, Nod Hill Brewery will be a welcoming gathering place for friends, family and beer lovers to meet, relax and enjoy a locally brewed beer," said David.

For over a decade, the two have dreamt of opening a brewery. Dave developed an interest in home brewing while attending college in Boston. Upon graduation, he worked at a pub in the U.K. as a bartender and cellarman where he fell in love with British cask ale. That enthusiasm continued to ferment -- pun intended -- on a trip to Austria where he and his dad enjoyed the monk brewed Marzen beer at the Augustiner Brewery in Salzburg.

Nod Hill will offer six core beers on draft in addition to regular cask offerings and special can and bottle releases. The two plan to regularly feature a hoppy session pale ale, a Belgian golden ale brewed with seasonal local ingredients and a juicy New England style double IPA.

There will also be a stout or porter as well as a double IPA. These beers will be augmented with a wide range of seasonal beers, cask offerings, and wild fermented ales.

The Kayes are using a 10-barrel system for their product, what they say is "Just the right size to provide enough beer for the taproom in addition to some local distribution."
